Orange date muffins (Diabetic cooking)



                Great orange aroma and flavour. Bits of dates and raisins give sweetness.

Combine in medium bowl :
-1½ cups all-purpose flour
-2 tablespoons brown sugar, packed
-1 teaspoon baking soda
-1 teaspoon baking powder
-¼ teaspoon salt

Combine in blender :
-1 medium orange, with peel, cut into 8 wedges
-¼ cup raisins
-¼ cup chopped dates
-2/3 cup 1% buttermilk
-3 tablespoons canola oil
-6 tablespoons frozen egg product, thawed or 2 large eggs

Process until orange, dates and raisins are well-chopped.
Pour into the dry ingredients, stir just until moistened.
Spray muffin cups with no-stick spray.
Fill cups ¾ full.
Bake in 400*F oven for 18-20 minutes.
Cool in pan for 5 minutes before turning out.
Makes 12 muffins.

Nutrition information : 1 muffin: 135 calories; 3.9 gr total fat (0.4 gr sat., 0.5 mg cholesterol); 209 mg sodium; 4 gr protein; 23 gr carbohydrate; 2 gr dietary fiber.
