Jerusalem artichoke have a flavor reminiscent of turnip and water chestnuts. This quick sauté is delicious with roast chicken and other meats.
Makes 4 servings
- 1 tablespoon vegetable oil
- 2 green onions, sliced
- 1 small sweet red pepper, cored, seeded and diced
- 1 package (16 ounces) Jerusalem artichokes, pared and cut into ¼-inch matchstick pieces
- 1 tablespoon chopped fresh mint
- ½ teaspoon salt
- 1 tablespoon lemon juice
- Heat oil in large skillet over medium-high heat ; add green onion and red pepper.
- Sauté 3 minutes until slightly softened.
- Add Jerusalem artichokes, mint and salt ; cook 3 minutes, stirring occasionally.
- Stir in lemon juice.
