Serves 4
- 1 tablespoon pickled green peppercorns
- 4 tablespoons mayonnaise
- 1 teaspoon lemon juice
- Pinch salt
- 1 small honeydew melon
- 100 gr thinly sliced Parma ham
- Drain the peppercorns, crush half of them with a fork or a mortar and pestle, and beat these into the mayonnaise, followed by the lemon juice and salt ; taste and adjust seasoning, arrange the sauce in a bowl and sprinkle with the remaining peppercorns.
- Slice the melon into wedges and scoop away the seeds with a teaspoon ; remove the rind from each wedge wit a sharp knife.
- Wrap the wedges individually in slices of ham and arrange on a platter.
- Serve the piquant mayonnaise separately.
