Makes 4 sandwiches
- ½ cup fat-free sour cream
- 2 tbsp. light mayonnaise
- 1 can of chipotle peppers in adobo sauce
- 2 tbsp. canned chipotle adobo sauce
- Pinch of salt
- 1 medium lime, to divide
- 4 small boneless, skinless chicken breasts (120 g each), slightly flattened
- Black pepper
- 2 slices of Swiss cheese, cut in half diagonally
- 4 whole wheat hamburger buns, separated
- 4 romaine lettuce leaves
- 4 thin slices of red onion
- Spray barbecue grate with cooking spray; prepare the barbecue for direct cooking.
- Combine sour cream, mayonnaise, chipotle pepper, adobo sauce and salt in a food processor or blender; blend until smooth.
- Squeeze juice from half a lime evenly over chicken; grill the chicken for 10 minutes over medium-high heat.
- Turn the chicken, pepper and grill for 10 minutes or until the chicken is cooked through (165F).
- Place chicken to side of barbecue; squeeze remaining lime half over chicken.
- Top chicken with cheese; meanwhile, lightly toast hamburger buns.
- Arrange lettuce, chicken and onion evenly on half the buns; spread the other half of the buns with the chipotle mixture and place on the sandwich.
