Brunch Enchiladas (Country breakfasts)


Make 4 servings

  • 2 cups ground fully cooked ham
  • ½ cup sliced green onions
  • ½ cup finely chopped green pepper
  • 2 tablespoons cooking oil
  • 8 flour tortillas (7 inches)
  • 2½ cups shredded cheddar cheese
  • 4 eggs
  • 2 cups light cream
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon garlic powder
  • 2 to 3 drops hot pepper sauce
  • Salsa
  • Sour cream
  1. In a skillet, saute ham, onions and green pepper in oil until vegetables are tender.
  2. Place one-third cup down the center of each tortilla ; top with 3 tablespoons cheese.
  3. Roll up and place seam side down in a greased 11-in. x 7-in. x 2-in. baking dish.
  4. In a bowl, beat the eggs ; add cream, flour, garlic powder and hot pepper sauce and mix well.
  5. Pour over tortillas ; cover and chill 8 hours or overnight.
  6. Remove from refrigerator 30 minutes before baking.
  7. Bake, uncovered, at 350F for 45-50 minutes or until a knife inserted near the center comes out clean.
  8. Sprinkle with remaining cheese.
  9. Let stand 5 minutes ; serve with salsa and sour cream.
