Gingerbread Pancakes

Serves 6
  • 2½ cups all-purpose flour
  • 5 teaspoons baking powder
  • 1½ teaspoons salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ cup molasses
  • 2 cups milk
  • 2 eggs
  • 6 tablespoons butter, melted
  • 1 cup raisins
  1. In a large bowl, combine the dry ingredients.
  2. Add the remaining ingredients and beat with an electric mixer until well blended.
  3. Pour the batter in small amounts onto a 275F griddle.
  4. Turn the pancakes when the edges are dry and bubbles rise to the surface.
