Pasta cooked with smoked salmon is becoming very fashionable. This is a quick and luxurious sauce.

- 6 scallions, finely sliced
- 50 gr butter
- 90 ml dry white wine
- 450 ml heavy cream 35%
- Salt and pepper
- Freshly grated nutmeg
- 225 gr smoked salmon
- 30 ml chopped fresh dill
- Freshly squeezed lemon juice
- 450 gr pasta bows (farfalle)
- Melt the butter in a saucepan and fry the scallions for 1 minute until softened.
- Add the wine and oil hard to reduce to about 30 ml ; stir in the cream and salt, pepper and nutmeg to taste.
- Bring to the boil and simmer for 2-3 minutes until slightly thickened.
- Cut the smoked salmon into 2,5 cm squares and stir into the sauce with the dill ; taste and add a little lemon juice and keep warm.
- Cook the pasta in plenty of boiling salted water according to the manufacture's instructions ; drain well.
- Toss the pasta with the sauce and serve immediately.
