Fusilli with Summer Pesto

 


                    Whole wheat pasta is a good source of complex carbohydrate and has a low GI value. Tossed with steamed summer vegetables and a fresh herb pesto, this makes a tempting and satisfying meal.

4 portions

  • 15 gr fresh flat-leaf parsley
  • 15 gr cilantro
  • 15 gr fresh mint
  • ¼ cup pine nuts
  • 1 large garlic clove, peeled
  • 3 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  1. To make the pesto, remove any large stalks from the herbs, then put the leaves in a small blender or food processor with the pine nuts, garlic and a little of the oil.
  2. Blend until well mixed.
  3. Gradually add the remaining oil to form a fairly smooth paste.
  4. Add the Parmesan and freshly ground black pepper to taste and process briefly to mix, set the pesto aside.
  5. Bring a large pot of lightly salted water to a boil.
  6. Spread out the zucchini, scallions, peas and fava beans in a steamer basket that will sit snuggly over the pot.
  7. Add the pasta to the pot of boiling water and bring back to a boil, then reduce the heat slightly and set the steamer basket on top of the pan.
  8. Boil the pasta and steam the vegetables for 11-13 minutes until both are cooked and just tender.
  9. Drain the pasta and turn into a large serving bowl.
  10. Add all the pesto and stir it thoroughly through the pasta, then add the steamed vegetables and toss gently until well mixed.
  11. Serve immediately or allow to cool and serve as a salad.
Variations : If you prefer, you can replace the fava beans with thin green beans that have been halved.

Sauce à Spaghetti Classique

 


8 portions

  • 900 gr boeuf haché
  • 4 oignons, coupés en dés
  • 6 tomates séchées, coupées en morceaux
  • 1 poivron vert, coupé en dés
  • 1 poivron rouge, coupé en dés
  • 4 branches de céleri, tranchées
  • 225 gr champignons, tranchés
  • 2 boîtes de tomates en purée
  • 1 boîte de tomates italiennes
  • 5 gousses d'ail, pressées
  • 156 ml pâte de tomate
  • 10 ml moutarde sèche
  • 30 ml sauce Worcestershire
  • 15 ml sauce chili
  • 125 ml vin rouge
  • 15 ml sirop d'érable
  • 5 ml de sel et de poivre
  • 5 ml sel de céleri
  • 5 ml sel d'ail
  • 5 ml basilic
  • 5 ml origan
  • 2 ml poivre de Cayenne
  • 2 feuilles de laurier
  1. Dans une grande marmite, faire dorer les oignons et l'ail.
  2. Aouter le boeuf haché et le faire brunir en mélangeant avec les oignons et l'ail.
  3. Ajouter tous les autres ingrédients et mélanger.
  4. Cuire environ 2 heures à feu moyen en remuant pour éviter que la sauce colle.

Lentil Spaghetti

 


                    Packed full of lentils and Italian flavors, this sauce is thick, hearty and zesty.

8 servings

  1. In a large saucepan coated with cooking spray, saute onion in oil until tender, add garlic and cook 1 minute longer.
  2. Stir in the lentils, broth, pepper and cayenne, bring to a boil and reduce heat.
  3. Cover and simmer for 20-30 minutes or until lentils are tender.
  4. Stir in tomatoes, tomato paste, vinegar, basil and oregano.
  5. Return to a boil, reduce heat, cover and simmer for 40-45 minutes.
  6. Cook the spaghetti according to package directions, drain.
  7. Serve with the lentil sauce, sprinkle with cheese.

Seafood Lasagna

 


                    This rich, satisfying dish is loaded with scallops, shrimp and crab in a creamy sauce.

12 servings

  • 1 green onion, finely chopped
  • 2 tablespoons canola oil
  • 2 tablespoons + ½ cup butter, divided
  • ½ cup fish or chicken stock
  • 1 bottle "8 ounces" clam juice
  • 1 pound bay scallops
  • 1 pound uncooked small shrimp, peeled and deveined
  • 1 package "8 ounces" imitation or real crabmeat, chopped
  • ½ cup all-purpose flour
  • 1½ cups milk
  • Salt and pepper
  • 1 cup heavy whipping cream
  • ½ cup shredded Parmesan cheese, divided
  • 9 lasagna noodles, cooked and drained
  1. In a large skillet, saute onion in oil and 2 tablespoons butter until tender.
  2. Stir in broth and clam juice, bring to a boil.
  3. Add scallops, shrimp and crab and a pinch of pepper, return to boil.
  4. Reduce heat, simmer, uncovered, for 4-5 minutes or until the shrimp turn pink and scallops are firm and opaque, stirring gently.
  5. Drain, reserving cooking liquid and set seafood mixture aside.
  6. In a large saucepan, melt the remaining butter, stir in the flour until smooth.
  7. Combine milk and reserved cooking liquid, gradually add to the saucepan.
  8. Add salt and pepper, to taste, and bring to a boil, cook and stir for 2 minutes or until thickened.
  9. Remove from the heat, stir in cream and ¼ cup cheese.
  10. Stir ¾ cup white sauce into the seafood mixture.
  11. Spread ½ cup white sauce in a greased 13-in x 9-in, baking dish.
  12. Top with three noodles, spread with half of the seafood mixture and 1¼ cups sauce, repeat layers.
  13. Top with the remaining noodles, sauce and cheese.
  14. Bake, uncovered, at 350F for 35-40 minutes or until golden brown.
  15. Let stand for 15 minutes before cutting.

Baked Smokin' Mac and Cheese

 


                This macaroni and cheese gets its flavor from smoked Gouda and smoked ham. The crunchy cornflake topping is the ideal counterpoint to the creamy noodles.

8 servings

  1. Preheat oven to 350F.
  2. Prepare pasta according to package directions.
  3. Meanwhile, melt 2 tablespoons butter in a Dutch oven over medium heat ; gradually whisk in flour, cook, whisking constantly, 1 minute.
  4. Gradually whisk in milk and evaporated milk until smooth ; cook, whisking constantly, 8 to 10 minutes or until slightly thickened.
  5. Whisk in Gouda cheese, sharp Cheddar cheese, cream cheese, salt and pinch of ground red pepper until smooth ; remove from heat, and stir in ham and pasta.
  6. Pour pasta mixture into a 13- x 9-inch baking dish coated ith cooking spray.
  7. Stir together crushed cereal, remaining 1 tablespoon melted butter, and remaining pinch ground red pepper ; sprinkle over pasta mixture.
  8. Bake at 350F for 30 minutes or until golden and bubbly.
  9. Let stand 5 minutes before serving.

Pâtes au Pesto de Menthe et de Petits Pois

 


                    Les rainures des catavappis permettent au pesto de bien adhérer aux pâtes, mais vous pouvez aussi utiliser vos pâtes préférées.

4 portions

  • 500 gr catavappis sèches (macaronis en forme de spirale)
  • Sel et poivre noir du moulin
Pesto de menthe et de petits pois
  • 300 gr petits pois surgelés
  • 60 ml huile d'olive
  • 2 gousses d'ail, broyées
  • 100 gr amandes mondées, hachées
  • 100 gr parmesan râpé et un peu plus pour le service
  • 5 ou 6 feuilles de menthe
  • Pincée de sucre
  1. Porter une grande casserole d'eau salée à ébullition et cuire les pâtes selon les instructions du paquet, ou jusqu'à cuisson al dente.
  2. Entre-temps, cuire les pois dans une casserole d'eau bouillante de 2 à 3 minutes, jusqu'à ce qu'ils soient tendres ; égoutter et mettre dans le bol du mélangeur.
  3. Ajouter l'huile d'olive, l'ail et les amandes, puis réduire en purée épaisse.
  4. Ajouter le parmesan et la menthe et mélanger de nouveau ; ajouter le sucre et assaisonner au goût.
  5. Remettre les pâtes égouttées dans la casserole, ajouter le pesto et bien réchauffer.
  6. Saupoudrer les pâtes de parmesan râpé et accompagner d'un mesclun.

Pennes à la Sauge et au Parmesan (Prêt en 10 minutes)

 


                    La ricotta salata est un fromage de brebis qui a un goût un peu plus prononcé que le parmesan. Essayez-la si vous avez la chance d'en trouver dans votre région.

4 portions

  • 500 gr pennes fraîches
  • 30 ml beurre
  • 2 gousses d'ail, en tranches
  • Quelques feuilles de sauge
  • 5 ml grains de poivre vert ou rose en saumure, égouttés et broyés
  • 125 ml ricotta salata (ricotta vieillie) ou parmesan râpé
  • Quelques feuilles de persil
  • Sel
  1. Porter une grande casserole d'eau salée à ébullition et cuire les pâtes pendant 2 minutes ou jusqu'à cuisson al dente.
  2. Entre-temps, dans une petite casserole, à feu doux, chauffer le beurre, puis ajouter l'ail et la sauge ; laisser infuser pendant la cuisson des pâtes.
  3. Égoutter les pâtes et les remettre dans la casserole ; verser le beurre sauge et bien mélanger.
  4. Ajouter les grains de poivre, saupoudrer de fromage et garnir de persil.
  5. Servir avec un mesclun.

Pasta, Ham and Fava Bean Salad

 


                    This quick and easy pasta salad is just right for busy people. It is appealing and sustaining and the watercress and walnut pesto dressing adds a great flavour.

                    For a vegetarian salad, omit the ham and add 4 chopped, hard-boiled eggs to the salad with the watercress.

Serves 4

  • 300 gr fusilli
  • 625 ml fresh or frozen shelled baby fava beans, thawed if necessary
  • 400 gr cherry tomatoes, halved
  • 150 gr cooked ham, diced
  • 60 ml snipped fresh chives
  • 15 ml olive oil
  • 50 gr watercress leaves, roughly chopped
Watercress and walnut pesto
  • 50 gr watercress leaves
  • 80 ml walnut pieces
  • 1 garlic clove
  • 60 ml olive oil
  • Half lemon, zest grated and juiced
  • 60 ml low-fat plain yogourt
  1. Cook the pasta in a large pot of lightly salted boiling water for 10 minutes ; add the fava beans and bring back to a boil, then reduce the heat slightly and cook for a further 2-3 minutes until the pasta is tender and the beans are lightly cooked.
  2. Meanwhile, mix together the tomatoes, ham, chives and oil in a large serving bowl ; set aside.
  3. To make the pesto, process the watercress, walnuts and garlic together in a food processor or blender until finely ground ; add half the oil and pulse until combined, then add the remaining oil, lemon zest and juice and the yogourt and blend again, season to taste.
  4. Drain the pasta and beans and immediately add them to the tomato mixture ; mix well, then cover and leave to stand for 5 minutes.
  5. Stir the pesto and chopped watercress into the salad, then serve immediately.

Chicken and Brocoli Pasta Bake


                    A healthy, quick and easy family meal, this hearty bake combines ready-cooked chicken and whole wheat pasta in a cheesy sauce. Including little brocoli florets is a great way to encourage children to enjoy this super-nourishing vegetable as part of their daily diet.

Serves 4

  • 250 gr whole wheat penne or other pasta shapes
  • 250 gr brocoli, cut into small florets and slice the stalks
  • 2 leeks, trimmed and sliced
  • 4 cooked skinless boneless chicken breasts
  • 500 ml 1% milk
  • 60 ml cornstarch
  • 250 ml grated aged cheese, such as gouda, smoked cheddar or old cheddar
  • 12 cherry tomatoes, halved
  • 60 ml grated Parmesan cheese
  • 5 ml dried oregano
  • 60 ml dried whole wheat breadcrumbs
  1. Preheat the oven to 375F (190C).
  2. Cook the pasta in a large pot of boiling water for 10-12 minutes or according to the package instructions, until tender ; add the brocoli and the leeks to the pasta for the last 5 minutes or so of cooking.
  3. When just tender, drain well, reserving about 250 ml of the cooking water.
  4. Tip the pasta and vegetables into a large ovenproof dish ; skin the chicken and cut into small chunks and add to the dish.
  5. Blend a little of the milk with the cornstarch to a paste in a cup.
  6. Heat the remaining milk and reserved cooking water in the same pot until on the point of boiling ; pour about 250 ml onto the cornstarch paste and stir well, then pour this into the simmering milky water and stir briskly with a wooden spoon until it thickens.
  7. Remove the pot from the heat and mix in the mature cheese ; season to taste.
  8. Pour the sauce over the pasta, stirring gently with a fork ; nestle the tomato halves into the mixture, then sprinkle the Parmesan, oregano and breadcrumbs.
  9. Bake for 20 minutes until bubbling and crispy on top ; serve hot.

Warm Tuna, Pasta and Parsley Salad

 


                    This is a simple and delicious pasta dish that is just as good served hot as it is cold. It makes a great lunch for friends because you can make it a day in advance, so you can relax and enjoy the company.

Serves 4-6

  • 250 gr cherry tomatoes
  • 1 large red onion, cut into wedges
  • 2 garlic cloves, sliced
  • 60 ml pine nuts
  • 15 ml olive oil
  • 300 gr penne or other pasta shapes
  • 2½ cans (170 grams each) tuna in water, drained
  • 199 ml can corn kernels, drained and rinsed
  • 125 ml chopped fresh flat-leaf parsley
Dressing
  • 1 lemon, juiced
  • 80 ml olive oil
  • 10 ml whole-grain mustard
  • 15 ml bottled capers, rinsed and roughly chopped
  1. Preheat the oven to 350F (180C).
  2. Line a baking tray with baking parchment and lay out the cherry tomatoes, onion, garlic and pine nuts ; drizzle everything ith the oil, season to taste and gently toss together.
  3. Roast for 15-20 minutes or until the tomatoes are softened and the pine nuts are lightly broned ; remove from the oven and set aside.
  4. Meanwhile, cook the pasta in a large pot of boiling water according to the package instructions until tender.
  5. To make the dressing, combine all the ingredients in a small bowl and mix together thoroughly.
  6. Once the pasta is cooked, strain in a colander, then return to the pot ; add the roasted tomato mixture, tuna, corn, parsley and dressing to the pasta and mix gently, without breaking up the tomatoes too much.
Each serving : 21 g protein, 19.5 g fat, 34 g carbohydrate, 4.5 g fibre, 404 Calories.

Linguine with Crab (Pasta)

 


                    This dish bursts with the color and flavour of fresh herbs, zesty lemon and piquant chili that enhance the sweet crab and pasta. It's an all-round star because it's so easy to make in the time that it takes to cook the pasta.

                    Add smoked salmon pieces or cooked, peeled shrimp instead of the crabmeat.

Serves 4

  • 250 gr cherry tomatoes, cut in half
  • 15 ml olive oil
  • 350 gr linguine
  • 1 red chili pepper, deseeded and finely chopped
  • ½ English cucumber, diced
  • 1 lemon, zest grated
  • 30 gr fresh chives, snipped
  • 30 gr fresh herb fennel leaves, chopped or 15 gr fresh dill, chopped
  • 200 gr fresh crabmeat
  • 500 ml baby arugula
  • 4 lemon wedges
  1. Preheat the broiler.
  2. Place the tomatoes, cut-sides up, on a heatproof dish ; sprinkle generously with frshl ground black pepper and trickle the oil over them.
  3. Broil the tomatoes until brown on top but still firm ; turn off the heat and leave them under the grill to keep warm while you prepare the rest of the meal.
  4. Meanwhile, cook the linguine in a large pot of lightly salted boiling water for 10 minutes or according to the package instructions, until tender but still firm "al dente".
  5. Put the chili pepper, cucumber, lemon zest, chives and fennel or dill in a large serving bowl and mix together thoroughly ; add the crabmeat and mix together lightly so the crabmeat doesn't break up too much.
  6. Drain the cooked pasta, add it to the crab mixture and toss together ; add the tomatoes and their juices together with the arugula and mix lightly, taking care not to break up the tomatoes.
  7. Serve at once, with lemon wedges to squeeze over the top.
Each serving : 16 g protein, 6 g fat, 53 g carbohydrate, 6 g fibre, 346 Calories.

Tagliatelle with Pancetta, Shrimp, and Roasted Tomatoes

 


Makes 4 servings

  • 60 ml olive oil
  • 120 gr pancetta, cut into small dice
  • 15 ml chopped garlic
  • 12 large shrimp, cleaned and butterflied
  • 5 ml chile flakes
  • Salt and freshly ground black pepper
  • 4 roasted tomatoes, peeled, seeded, and cut into large chunks
  • 400 gr tagliatelle
  • 30 ml freshly grated Parmesan cheese
  • 30 ml coarsely chopped basil
  1. Heat a large sauté pan over medium-high heat and add the olive oil ; when the oil is hot, add the pancetta and sauté until crispy and nice and brown.
  2. Add the garlic and cook, stirring , or 30 seconds to 1 minute, until fragrant ; stir in the shrimp, chile flakes, and salt and pepper, and continue to cook until the shrimp are pink and cooked through, about 5 minutes.
  3. Add the tomatoes and simmer slowly for 5 minutes.
  4. Bring a large pot of salted water to a boil and add the pasta ; cook until slightly al dente.
  5. When the pasta is cooked, drain well, add to the pan with the shrimp, toss well, and garnish with the grated Parmesan cheese and chopped basil.
  6. Serve immediately.

Capellinis au Jambon, Asperges et Pesto aux Tomates (Soupers express)

 


4 portions

  • 340 gr capellinis (cheveux d'ange) ou spaghettinis
  • 12 asperges coupées en morceaux
  • 30 ml huile d'olive
  • 250 gr poireaux émincés
  • 375 ml jambon coupé en dés
  • 30 ml pesto aux tomates séchées
  • 30 ml ciboulette fraîche émincée
  • Sel et poivre au goût
  1. Dans une casserole d'eau bouillante salée, cuire les pâtes al dente.
  2. Ajouter les morceaux d'asperges 3 minutes avant la fin de la cuisson des pâtes ; égoutter et remettre les pâtes et les asperges dans la casserole.
  3. Dans une poêle, chauffer l'huile à feu moyen ; cuire les poireaux et le jambon de 2 à 3 minutes.
  4. Dans la casserole contenants les pâtes et les asperges, transférer le mélange de jambon et poireaux ; chauffer de 2 à 3 minutes en remuant.
  5. Incorporer le pesto et la ciboulette ; saler et poivrer.
  6. Servir immédiatement.

Salade Tiède de Farfalles au Jambon, Tomates Séchées et Asperges (Vive les salades!)

 


4 portions

  • 350 gr farfalles
  • 16 asperges coupées en morceaux
  • 1 oignon émincé
  • 1 poivron rouge taillé en dés
  • 375 ml jambon taillé en dés
  • 60 ml tomates séchées émincées
  • 30 ml basilic frais émincé
  • 30 ml persil frais haché
Pour la vinaigrette
  • 80 ml huile d'olive
  • 30 ml vinaigre de cidre
  • 30 ml moutarde à l'ancienne
  • Sel et poivre au goût
  1. Dans une casserole d'eau bouillante salée, cuire les pâtes al dente ; ajouter les asperges dans la casserole 3 minutes avant la fin de la cuisson des pâtes, égoutter.
  2. Dans un saladier, mélanger les ingrédients de la vinaigrette.
  3. Dans une poêle, chauffer le quart de la vinaigrette à feu moyen ; saisir l'oignon, le poivron et le jambon de 2 à 3 minutes en remuant.
  4. Transférer la préparation dans le saladier ; ajouter les pâtes, les asperges, les tomates séchées et les fines herbes, mélanger.

Gratin de Tortiglionis, Sauce aux Boulettes de Veau (Festin de pastas)

 


4 à 6 portions

  • 350 gr tortiglionis
  • 375 ml havarti ou cheddar râpé
Pour les boulettes
  • 450 gr veau haché mi-maigre
  • 80 ml romano râpé
  • 60 ml chapelure nature
  • 60 ml noix de pin hachées
  • 10 ml thym frais haché
  • 10 ml ail haché
  • 1 oeuf
  • Sel et poivre au goût
Pour la sauce
  • 30 ml huile d'olive
  • 8 champignons émincés
  • 1 oignon haché
  • 500 ml sauce marinara
  • Sel et poivre au goût
  • 125 ml olives noires tranchées
  1. Dans une casserole d'eau bouillante salée, cuire les pâtes al dente ; égoutter.
  2. Pendant ce temps, mélanger les ingrédients des boulettes dans un bol ; façonner 16 boulettes avec environ 30 ml de préparation pour chacune d'elles.
  3. Préchauffer le four à 400F (200C).
  4. Dans une casserole, chauffer l'huile à feu moyen ; faire dorer les boulettes de 2 à 3 minutes.
  5. Ajouter les champignons et l'oignon ; cuire 1 à 2 minutes.
  6. Verser la sauce marinara ; porter à ébullition, assaisonner et laisser mijoter à feu doux de 3 à 4 minutes.
  7. Ajouter les pâtes et remuer.
  8. Transférer la préparation dans un plat de cuisson de 20 cm ; couvrir de fromage.
  9. Cuire au four 20 minutes, jusqu'à ce que le fromage soit gratiné.
Le truc : Cuisiner les boulettes demandent un certain temps de préparation. Lorsque vous ferez cette recette, doublez-la et congeler les boulettes en surplus pour un usage futur. Le jour venu, vous n'aurez qu'à les décongeler et à les faire cuire. Elles pourraient même être apprêtées avec une autre sauce.

Spaghettis Sauce Minute aux Tomates Cerises et Basilic (Festin de pastas)

 


4 portions

  • 350 gr spaghettis 
Pour la sauce aux tomates cerises et basilic
  • 30 ml huile d'olive
  • 20 tomates cerises rouges coupées en deux
  • 2 gousses d'ail émincées
  • 500 ml sauce marinara
  • 60 ml basilic émincé
Pour garnir
  • Quelques feuilles de basilic
  1. Si désiré, préparer la garniture de légumes poêlés au bacon (voir la recette ci-dessous) ; réserver à feu doux.
  2. Dans une casserole d'eau bouillante salée, cuire les pâtes al dente ; égoutter.
  3. Dans une autre casserole, chauffer l'huile à feu moyen.
  4. Cuire les tomates cerises et l'ail de 1 à 2 minutes, puis verser la sauce ; porter à ébullition et laisser mijoter 2 minutes.
  5. Ajouter le basilic et remuer.
  6. Répartir les pâtes égouttées dans les assiettes puis napper de sauce.
  7. Si désiré, ajouter la garniture de légumes poêlés et les feuilles de basilic.
Légumes poêlés au bacon
  1. Dans une poêle, cuire 8 tranches de bacon coupées en morceaux de 2 à 3 minutes à feu moyen.
  2. Retirer l'excédent de gras, puis ajouter dans la poêle 1 poivron rouge coupé en dés, 8 champignons émincés et 1 courgette émincé.
  3. Cuire 4 minutes à feu moyen-élevé, jusqu'à ce que le bacon soit bien doré ; poivrer.

Farfalles au Saumon Fumé et Asperges (Festin de pastas)

 


4 portions

  • 375 gr farfalles
  • 16 asperges coupées en morceaux
  • 15 ml huile d'olive
  • 1 petit oignon rouge émincé
  • 250 ml lait
  • 1 contenant de fromage à la crème au saumon fumé de 250 gr
  • 1 paquet de saumon fumé de 140 gr coupé en lanières
  • 45 ml aneth frais haché ou 15 ml aneth séché
  • Sel et poivre au goût
  1. Dans une casserole d'eau bouillante salée, cuire les pâtes al dente ; ajouter les asperges dans la casserole 3 minutes avant la fin de la cuisson des pâtes et égoutter.
  2. Dans une poêle, chauffer l'huile à feu moyen ; saisir l'oignon rouge 1 à 2 minutes.
  3. Ajouter le lait et le fromage à la crème ; porter à ébullition en remuant, retirer du feu.

Pennes Marinara aux Saucisses Italiennes (Festin de pastas)

 


4 portions

  • 350 gr pennes
  • 30 ml huile d'olive
  • 4 saucisses italiennes fortes ou douces
  • 1 oignon haché
  • 1 poivron jaune émincé
  • 500 ml sauce tomate maison ou du commerce relevé à l'ail
  • 125 ml olives noires grossièrement hachées
  • 45 ml basilic frais émincé
  • Quelques feuilles de basilic (facultatif)
  • Quelques copeaux de parmesan (facultatif)
  1. Dans une casserole d'eau bouillante salée, cuire les pâtes al dente ; égoutter.
  2. Pendant ce temps, chauffer l'huile à feu moyen dans une autre casserole ; faire revenir les saucisses de 4 à 5 minutes en remuant.
  3. Ajouter l'oignon, le poivron et les olives noires ; cuire de 2 à 3 minutes.
  4. Émincer les saucisses et remettre dans la casserole ; ajouter la sauce tomate et réchauffer 3 à 4 minutes.
  5. Ajouter le basilic émincé et les pâtes égouttées ; remuer.
  6. Répartir les pâtes dans les assiettes ; si désiré, garnir de feuilles de basilic et de copeaux de parmesan.

Salade Tiède de Mini-Raviolis et Pancetta (Hot, les salades tièdes!)

 


4 portions

  • 1 paquet de mini-raviolis de 350 gr
  • 80 ml huile d'olive
  • 125 ml pancetta taillée en dés
  • 8 à 10 haricots verts coupés en morceaux
  • 30 ml jus de citron
  • 30 ml persil haché
  • 15 ml ail haché
  • 60 ml parmesan râpé
  • Sel et poivre au goût
  1. Dans une casserole d'eau bouillante salée, cuire les mini-raviolis al dente ; égoutter et rincer quelques secondes sous l'eau froide et égoutter de nouveau.
  2. Dans la même casserole, chauffer 15 ml d'huile à feu moyen ; cuire la pancetta avec les haricots verts de2 à 3 minutes, retirer du feu et laisser tiédir.
  3. Dans un saladier, mélanger le reste de l'huile d'olive avec le jus de citron, le persil et l'ail.
  4. Ajouter les mini-raviolis, les haricots verts, la pancetta et le parmesan.
  5. Assaisonner et servir.

Salade d'Orzo au Crabe

 


                    Méconnue, l'orzo, cette petite pâte italienne, remplace le riz dans plusieurs recettes. On l'aime particulièrement dans les soupes, en salade ou cuisiner à la manière d'un risotto.

4 à 6 portions

  • 1 paquet d'orzo de 500 gr
Pour la vinaigrette
  • 125 ml huile végétale
  • 30 ml huile de noix
  • Le jus de 1 citron
  • 15 ml vinaigre balsamique
  • 15 ml vinaigre de vin rouge
  • 15 ml thym frais haché
  • 15 ml basilic frais haché
  • 5 ml poivre noir fraîchement moulu
  • 1 gousse d'ail hachée finement
  • Sel au goût
Pour la salade
  • 1 poivron jaune, coupé en dés
  • 1 poivron rouge, coupé en dés
  • 1 tomate, coupée en dés
  • 300 gr chair de crabe fraîche ou surgelée
  • 125 ml basilic frais émincé
  • 125 ml grains de grenade
  • 60 ml olives Kalamata, dénoyautées et tranchées
  • 60 ml feta émiettée
  • 30 ml câpres, rincées et égouttées
  1. Dans une casserole d'eau bouillante salée, cuire l'orzo al dente.
  2. Égoutter, puis rincer sous l'eau froide ; égoutter de nouveau.
  3. Dans un bol, fouetter les ingrédients de la vinaigrette.
  4. Dans un saladier, déposer tous les ingrédients de la salade ; verser les deux tiers de la vinaigrette et remuer.
  5. Réfrigérer au moins 2 heures avant de servir ; réserver le reste de la vinaigrette au frais.
  6. Au moment de servir, incorporer le reste de la vinaigrette.
