Makes a great breakfast for the whole family. Serve with fresh fruit.
Makes 4 burritos
- ¼ cup chopped green onion
- 2 teaspoons margarine
- 1cup frozen egg product, thawed (or 5 large eggs)
- ¼ teaspoon chili powder
- ¼ teaspoon salt
- 2 tablespoons chopped pickled hot peppers
- ¾ cup grated light aged cheddar (or Monterey Jack) cheese
- 4 whole wheat flour tortillas (10-inch), warmed
- 2 tablespoons Salsa (optional)
- 2 tablespoons Light sour cream (optional)
- Sauté green onion in margarine in large non-stick frying pan for 30 seconds ; pour in egg product (or 5 large eggs, beaten).
- Sprinkle with chili powder and salt ; heat, stirring occasionally, on medium until eggs start to set, add peppers and heat until eggs are cooked.
- Divide and sprinkle cheese over tortillas.
- Place ¼ of egg mixture in line down center of each tortilla over cheese.
- Top eggs with salsa and sour cream ; Roll tortillas, tucking in sides, to enclose filling.
- Cut in half to serve.
