Morning Burritos (Diabetic cooking)


     Makes a great breakfast for the whole family. Serve with fresh fruit.

Makes 4 burritos

  • ¼ cup chopped green onion 
  • 2 teaspoons margarine
  • 1cup frozen egg product, thawed (or 5 large eggs)
  • ¼ teaspoon chili powder
  • ¼ teaspoon salt
  • 2 tablespoons chopped pickled hot peppers
  • ¾ cup grated light aged cheddar (or Monterey Jack) cheese
  • 4 whole wheat flour tortillas (10-inch), warmed
  • 2 tablespoons Salsa (optional)
  • 2 tablespoons Light sour cream (optional)
  1. Sauté green onion in margarine in large non-stick frying pan for 30 seconds ; pour in egg product (or 5 large eggs, beaten).
  2. Sprinkle with chili powder and salt ; heat, stirring occasionally, on medium until eggs start to set, add peppers and heat until eggs are cooked.
  3. Divide and sprinkle cheese over tortillas.
  4. Place ¼ of egg mixture in line down center of each tortilla over cheese.
  5. Top eggs with salsa and sour cream ; Roll tortillas, tucking in sides, to enclose filling.
  6. Cut in half to serve.
