Makes about 7 pints
- 2 cups pears, diced
- 3 cups apples, diced
- 2 cups green tomato, diced
- 1 medium onion, minced
- 1 red pepper, minced
- 3 cups cider vinegar
- 1½ cups sugar
- 1½ teaspoons salt
- ½ teaspoon white pepper
- ¾ teaspoon ground cinnamon
- ¼ teaspoon Cayenne pepper
- 1¼ cups golden raisins
- Combine all ingredients in a heavy saucepan and bring to a boil stirring constantly ; reduce heat to a simmer and continue cooking until thickened.
- Laddle into hot jars, wipe rims and seal ; process in a water bath canner for 10 minutes.
