Apple-pear chutney (Canning and preserving)

 


Makes about 7 pints

  • 2 cups pears, diced
  • 3 cups apples, diced
  • 2 cups green tomato, diced
  • 1 medium onion, minced
  • 1 red pepper, minced
  • 3 cups cider vinegar
  • 1½ cups sugar
  • 1½ teaspoons salt
  • ½ teaspoon white pepper
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon Cayenne pepper
  • 1¼ cups golden raisins
  1. Combine all ingredients in a heavy saucepan and bring to a boil stirring constantly ; reduce heat to a simmer and continue cooking until thickened.
  2. Laddle into hot jars, wipe rims and seal ; process in a water bath canner for 10 minutes.
