Tilapia with spinach and feta (Keto)

 


Makes 2 servings

  • 2 teaspoons olive oil, divided
  • 1 clove garlic, minced
  • 4 cups baby spinach
  • 2 skinless tilapia fillets or other mild white fish (4 ounce each)
  • Pinch of black pepper
  • 2 ounces feta cheese, cut into 2 (3-inch) pieces
  1. Preheat oven to 350F.
  2. Heat 1 teapoon oil in medium cast iron or other ovenproof skillet over medium-low heat ; add garlic, cook 30 seconds.
  3. Add spinach and cook just until wilted.
  4. Place tilapia on cutting board, sprinkle with pepper ; place one piece of cheese on each fillet and top with spinach mixture.
  5. Fold one end of each fillet up and over filling ; secure with toohtpick and repeat with the opposite end of each fillet.
  6. Wipe out skillet with paper towels.
  7. Brush with remaining 1 teaspoon oil, arrange fish in skillet ; bake 20 minutes or until fish begins to flakes when tested with fork.
