Makes 2 servings
- 2 teaspoons olive oil, divided
- 1 clove garlic, minced
- 4 cups baby spinach
- 2 skinless tilapia fillets or other mild white fish (4 ounce each)
- Pinch of black pepper
- 2 ounces feta cheese, cut into 2 (3-inch) pieces
- Preheat oven to 350F.
- Heat 1 teapoon oil in medium cast iron or other ovenproof skillet over medium-low heat ; add garlic, cook 30 seconds.
- Add spinach and cook just until wilted.
- Place tilapia on cutting board, sprinkle with pepper ; place one piece of cheese on each fillet and top with spinach mixture.
- Fold one end of each fillet up and over filling ; secure with toohtpick and repeat with the opposite end of each fillet.
- Wipe out skillet with paper towels.
- Brush with remaining 1 teaspoon oil, arrange fish in skillet ; bake 20 minutes or until fish begins to flakes when tested with fork.
