Brussels sprouts with bacon and butter (Keto)

 


Makes 4 servings

  • 6 slices thick-cut bacon, cut into ½-inch pieces
  • 1½ pounds brussels sprouts (about 24 medium halved)
  • Pinch of salt and black pepper
  • 2 tablespoons butter, softened
  1. Preheat oven to 375F.
  2. Cook bacon in large cast iron skillet until almost crisp ; drain on paper towel-lined plate and set aside.
  3. Drain all but 1 tablespoon drippings.
  4. Add brussels sprouts to skillet ; sprinkle with salt and pepper and toss to coat, spread in skillet.
  5. Roast 30 minutes or until brussels sprouts are browned and crispy, stirring every 10 minutes.
  6. Add butter to skillet, stir until completely coated ; stir in bacon.
