Makes 4 servings
- 6 slices thick-cut bacon, cut into ½-inch pieces
- 1½ pounds brussels sprouts (about 24 medium halved)
- Pinch of salt and black pepper
- 2 tablespoons butter, softened
- Preheat oven to 375F.
- Cook bacon in large cast iron skillet until almost crisp ; drain on paper towel-lined plate and set aside.
- Drain all but 1 tablespoon drippings.
- Add brussels sprouts to skillet ; sprinkle with salt and pepper and toss to coat, spread in skillet.
- Roast 30 minutes or until brussels sprouts are browned and crispy, stirring every 10 minutes.
- Add butter to skillet, stir until completely coated ; stir in bacon.
