Unlike the sweetened condensed milk versions, this one can be kept at room temperature. An important feature for bake sale fare.
- ½ cup butter
- 1cup sugar
- 1 cup fresh lime juice
- 4 egg yolks
- 2 eggs
- 1 tablespoon grated lime peel
- 9-inch pie shell, baked and cooled
- ½ cup lightly toasted coconut
- Melt butter in saucepan over low heat.
- Whisk in sugar, lime juice, egg yolks, eggs and lime peel and cook, stirring constantly, until mixture thickens.
- Let cool to room temperature.
- Pour into pie shell ; top with toasted coconut.
