Key Largo Lime tart (The great american bake sale)

     Unlike the sweetened condensed milk versions, this one can be kept at room temperature. An important feature for bake sale fare.

 
Makes one 9-inch pie
  • ½ cup butter
  • 1cup sugar
  • 1 cup fresh lime juice
  • 4 egg yolks
  • 2 eggs
  • 1 tablespoon grated lime peel
  • 9-inch pie shell, baked and cooled
  • ½ cup lightly toasted coconut
  1. Melt butter in saucepan over low heat.
  2. Whisk in sugar, lime juice, egg yolks, eggs and lime peel and cook, stirring constantly, until mixture thickens.
  3. Let cool to room temperature.
  4. Pour into pie shell ; top with toasted coconut.
