Chanterelles, Corn, and Goat Cheese with Tagliatelle


     The combination of fresh, nutty chanterelles and just-picked sweet corn with the fresh tang of goat cheese delivers summer in a bowl.

Serves 4
  • 1 pound tagliatelle
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • ½ pound fresh chamterelles, whole if small or cut in half
  • Kernels from 4 ears fresh corn (about 2 cups)
  • ½ teaspoon coarse kosher salt
  • 8 slender scallions, white and pale green parts only, sliced into ½-inch lengths at an angle
  • 1 cup crumbled fresh soft goat cheese
  • Freshly ground black pepper to taste
  1. Put a large pot of salted water on to boil for the pasta ; cook the pasta according to package directions.
  2. While the pasta is cooking, set a large sauté pan or skillet over medium-high heat and heat the olive oil and butter until foamy.
  3. Add the chanterelles and corn and cook, stirring occasionally, for 4-5 minutes until the mushrooms and corn are lightly colored ; add the salt and scallions and cook, stirring occasionally, for 3-4 minutes until everything is golden.
  4. Before drainig the pasta, scoop ½ cup of the pasta cooking liquid out of the pot and reserve it.
  5. Drain the pasta and toss it immediately into the pan with the vegetables ; sprinkle the goat cheese over the pasta along with about ¼ cup of the reserve pasta cooking liquid.
  6. Toss to coat, adding a little more liquid if desired ; adjust seasoning to taste and serve immediately.

Shepperd's Pie with caramelized onions and cheddar smash


     A true sheppard's pie is always made with lamb ; the similar dish made with beef is properly called a cottage pie. It is one of the most comforting and homey dishes around.
     Grated cheddar melted on top is not traditional, of course, but with all that great Shelburne Farms cheddar around, it was a natural and delicious addition. But if it is not available, any good cheddar will give a great result as well!

Serves 6-8

For the caramelized onions
  • 3 tablespoons olive oil
  • 2 pounds onions, thinly sliced crosswise into rounds
  • 1 teaspoon coarse kosher salt
  1. In a large, heavy-bottomed sauté pan or skillet set over medium heat, heat the olive oil until hot.
  2. Add the onions to the pan and turn the heat down to medium-low ; sprinkle the onions with the salt, stirring frequently to make sure they Brown evenly, for about 30-40 minutes or until they are completely golden brown and soft.
  3. You should have 1½-2 cups of onions ; set aside.
For the potato smash
  • 3 pounds all-purpose potatoes, such as Yukon gold, scrubbed but not peeled and cut into 2-inch chunks
  • 4 garlic cloves, smashed with the flat side of a knife
  • 1 teaspoon coarse kosher salt
  • ¼ cup unsalted butter, cut into 4 pièces
  1. Select a large pot that can accomodate a steamer insert or heat proof colander large enough to hold your potatoes ; fill it with water up to the bottom of the steamer insert, add the potatoes and garlic cloves, and sprinkle them with salt.
  2. Cover the pot, set it over high heat, and bring the water to a boil ; reduce the heat to maintain an active simmer and steam the potatoes for 25-30 minutes until they break apart easily when poked with a fork.
  3. Remove the potatoes and garlic from the steamer, pour off the hot water, and return the potatoes and garlic to the pot ; cover the potatoes with a clean dish towel and let them dry out for about 5 minutes.
  4. Add the butter to the pot and use a potato masher to smash the potatoes and garlic until blended but not conpletely smooth ; adjust seasoning and set aside.
For the lamb filling and to finish pie
  • 1 tablespoon olive oil
  • 1½ cups diced carrots
  • 2 pounds ground lamb
  • 1½ teaspoons fresh thyme leaves, minced
  • 1 teaspoon coarse kosher salt
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 2 cups chicken stock
  • 1 cup grated cheddar
  1. Preheat the oven to 400F.
  2. In a large sauté pan or skillet set over medium-high heat, heat the olive oil until hot ; add the diced carrots and cook, stirring occasionally, for 8-10 minutes until softened.
  3. Add the lamb, thyme, and salt, and cook, stirring occasionally, for 8-10 minutes until the meat is no longer pink ; carefully pour off all the fat and discard.
  4. Sprinkle the flour over the lamb and cook for 1 minute, stirring ; then stir in the tomato paste and cook, stirring, for 2 minutes longer.
  5. Pour the stock. along with 1 cup of the caramelized onions, increase the heat slightly and simmer, 2-3 minutes, until the gravy thickens slightly.
  6. Spead the lamb into a shallow round or oval 3-quart casserole or a 9 by 13-inch baking dish ; spread the potatoes on top, distribute the remaining caramelized onions over the mashed potatoes, then sprinkle the cheddar evenly on top.
  7. Bake until the top ia golden and crusty, about 20 minutes.

Poires au vin rouge et aux épices


Pour 4 portions
  • 4 grosses poires Bosc ou Williams
  • 2 citrons
  • 1.5 l vin rouge
  • 300 gr sucre
  • 1 gousse de vanille
  • 1 petit bâton de cannelle
  • 1 anis étoilé
  • 5 grains de poivre
  1. Peler les poires, les évider avec un vide-pomme pour éliminer le trognon et tous les pépins ; plonger les poires dans un grand bol d'eau fraîche additionnée du jus de 1 citron afin qu'elles restent bien blanches et réserver.
  2. Dans une marmite assez grande, verser le vin avec 250 ml d'eau ; y ajouter le sucre, le jus du second citron, la gousse de vanille coupée en deux dans la longueur, la cannelle, l'anis étoilé et le poivre.
  3. Porter à ébullition, écumer rapidement, puis laisser frémir 1 minute à petit feu, en vous assurant de la complète dissolution du sucre.
  4. Plonger les poires dans le liquide brûlant, les pocher pendant 20 minutes environ, sans jamais laisser bouillir la préparation ; sortir du feu.
  5. Laisser refroidir et réfrigérer pendant 24 heures ; conserver le liquide.
  6. Placer les poires dans des assiettes et les servir avec le jus de cuisson.

Tajine de canard aux kumquats



     Le kumquat est le plus petit des agrumes, il se consomme avec la peau.

Pour 6 portions
  • 1 gousse d'ail, pelée et hachée
  • 2 oignons, pelés et hachés
  • 250 gr kumquats, coupés en deux et enlevés les pépins
  • 15 ml huile d'olive
  • 5 ml graines de cumin
  • 5 ml cannelle en poudre
  • 1 canard coupé en 6 morceaux
  • 30ml miel
  • 100 gr olives noires, dénoyautées
  • 250 ml bouillon de volaille
  • 1 petit bouquet de coriandre, ciselée
  • Sel et poivre du moulin
  1. Mettre à chauffer une cocotte avec l'huile d'olive, puis ajouter les graines de cumin, la cannelle, l'ail et les oignons ; mélanger avec une cuillère en bois, puis faire dorer les morceaux de canard en les retournant régulièrement, vider la cocotte de la graisse rendue par le canard.
  2. Ajouter les kumquats dans la cocotte, ainsi que le miel, les olives noires et e bouillon de volaille ; couvrir et laisser cuire pendant 30 minutes à feu moyen, ajouter un peu d'eau en cours de cuisson si nécessaire.
  3. Verser dans un plat de service et parsemer de coriandre ciselée.
  4. Servir chaud.

Tarte à l'oignon, au bleu et aux cinq épices (Entrées)


Pour 1 tarte (6 portions)
  • 1 pâte feuilletée du commerce
  • 3 oignons, pelés et émincés
  • 15 ml huile d'olive
  • 2 ml cumin en poudre
  • 2 ml mélange quatre-épices
  • 3 œufs
  • 350 ml lait
  • 125 gr bleu d'Auvergne
  • 50 gr pignons de pin
  • Sel et poivre
  1. Préchauffer le four à 375F (180C).
  2. Étaler la pâte feuilletée dans un moule à tarte.
  3. Mettre une poêle à chauffer avec l'huile d'olive ; y verser les oignons et les faire revenir pour qu'ils soient tout juste dorés, saupoudrer avec les épices.
  4. Répartir les oignons cuits sur le fond de tarte.
  5. Dans un bol, fouetter les œufs et le lait, saler et poivrer, puis ajouter le bleu d'Auvergne émietté ; mélanger et verser sur les oignons.
  6. Parsemer de pignons de pin et enfourner pour 30 minutes de cuisson.
***Vous pouvez préparer votre propre pâte brisée ou acheter carrément un fond de tarte dans la section des congelés au supermarché.

Soupe glaçée de concombre et pomme


     Remplacer la chair de crabe par de la feta émiettée.

Pour 4 portions
  • 2 concombres, pelés et coupés en grosses rondelles
  • 1 pomme Granny-Smith, pelée et coupée en quartiers
  • Le jus de 2 citrons verts
  • 200 ml crème 15%
  • 1 boîte de chair de crabe
  • Sel et poivre
  1. Mettre les concombres et la pomme dans le bol d'un mixeur ; ajouter le jus de citron et la crème.
  2. Mixer, saler et poivrer.
  3. Servir avec la chair de crabe et quelques dés de pomme en accompagnement.

Soupe de carottes, ananas et cumin


     Cette recette ultra-légère et délicieuse ravir tous ceux qui surveillent leur ligne de près !

Pour 4 portions
  • 400 gr carottes, pelées et coupées en rondelles
  • 5 ml cumin en poudre
  • 250 ml nectar d'ananas
  • 1 pincée de poivre de Cayenne
  • Sel et poivre du moulin
  1. Mettre les carottes dans une casserole, les couvrir d'eau, saler et porter à ébullition ; couvrir et laisser cuire 15 minutes, puis égoutter.
  2. Verser les carottes dans le bol d'un mixeur ; ajouter le cumin et le nectar d'ananas.
  3. Mixer puis rectifier l'assaisonnement, sel, poivre du moulin et poivre de Cayenne.
  4. Placer au froid avant de servir.
