- 3 eggs
- 3 egg whites
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1½ cups frozen brocoli florets, thawed
- 6 ounces smoked deli ham, cut into ½-inch cubes (1¼ cups)
- ½ cup jarred roasted red peppers, cut into thin strips
- 1 tablespoon butter
- ½ cup shredded sharp cheddar cheese
- Preheat broiler.
- In a large bowl, whisk eggs, egg whites, salt and black pepper until blended ; stir in brocoli, ham and roasted red peppers.
- Melt butter in 10-inch ovenproof skillet over medium-low heat ; Pour egg mixture into skillet.
- Cover ; cook 5 to 6 minutes or until eggs are set around edge. (Center will be wet).
- Undercover ; sprinkle cheese over frittata, transfer skillet to broiler.
- Broil 5 inches from heat 2 minutes or until center is set and cheese is melted ; let stand 5 minutes and cut into 4 wedges.
