Lobster Tartlets

 

 

                   If you prefer you can bake the tart cases yourself.

Serves 4

  • 4 tablespoons mayonnaise
  • 2 tablespoons double cream
  • Few drops lemon juice
  • Pinch each salt and sugar
  • 4 savoury shortbread pastry tart cases (bought ready-made)
  • 350 gr lobster meat
  • 4 lettuce leaves
  • 4 teaspoons lumpfish roe
  • Few dill sprigs, for garnish
  1. Beat the mayonnaise with the cream, lemon juice, salt and sugar and pour into the tart cases.
  2. Slice the lobster meat and arrange over the mayonnaise.
  3. Wash the lettuce, drain thoroughly and arrange on four individual plates.
  4. Place the tartlets on the lettuce ; top each tartlet with 1 teaspoon lumpfish roe and garnish with dill.
