Melon with Parma Ham and Piquant Mayonnaise

 


Serves 4

  • 1 tablespoon pickled green peppercorns
  • 4 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • Pinch salt
  • 1 small honeydew melon
  • 100 gr thinly sliced Parma ham
  1. Drain the peppercorns, crush half of them with a fork or a mortar and pestle, and beat these into the mayonnaise, followed by the lemon juice and salt ; taste and adjust seasoning, arrange the sauce in a bowl and sprinkle with the remaining peppercorns.
  2. Slice the melon into wedges and scoop away the seeds with a teaspoon ; remove the rind from each wedge wit a sharp knife.
  3. Wrap the wedges individually in slices of ham and arrange on a platter.
  4. Serve the piquant mayonnaise separately.
