Pineapple and bacon bites

 


Makes 18 servings (2 appetizers per serving)

  • 1 medium-size fresh pineapple or 1 can/20 ounces pineapple slices in juice, drained and each slice cut into quarters
  • ¼ cup chutney
  • ¼ teaspoon ground cinnamon
  • Pinch of ground hot red pepper
  • About 12 slices bacon
  1. Remove crown from pineapple ; slice pineapple lengthwise into 4 wedges, remove core from each wedge.
  2. Cut fruit in one piece from rind ; cut each wedge crosswise into 9 equal pieces.
  3. Stir together chutney, cinnamon and hot red pepper in large bowl ; add pineapple and toss to coat well.
  4. Cut bacon crosswise into thirds ; wrap each pineapple slice with bacon slice, secure with wooden picks.
  5. When ready to serve, preheat broiler ; arrange bacon-wrapped pineapple on rack in broiler pan.
  6. Broil 5 to 7 minutes to crisp bacon.
