Makes 18 servings (2 appetizers per serving)
- 1 medium-size fresh pineapple or 1 can/20 ounces pineapple slices in juice, drained and each slice cut into quarters
- ¼ cup chutney
- ¼ teaspoon ground cinnamon
- Pinch of ground hot red pepper
- About 12 slices bacon
- Remove crown from pineapple ; slice pineapple lengthwise into 4 wedges, remove core from each wedge.
- Cut fruit in one piece from rind ; cut each wedge crosswise into 9 equal pieces.
- Stir together chutney, cinnamon and hot red pepper in large bowl ; add pineapple and toss to coat well.
- Cut bacon crosswise into thirds ; wrap each pineapple slice with bacon slice, secure with wooden picks.
- When ready to serve, preheat broiler ; arrange bacon-wrapped pineapple on rack in broiler pan.
- Broil 5 to 7 minutes to crisp bacon.
