Easy mini-pizzas

 


    Frozen bread dough makes these pizzas simple to fix for a hearty party snack or a festive light lunch.

Makes 16 individual pizzas

Easy tomato sauce ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 1 can/14½ ounces stewed tomatoes, crushed
  • 1 teaspoon sugar
  • ¼ teaspoon leaf oregano, crumbled
  • Salt and pepper
Mini-pizzas ingredients
  • 1 loaf (1 pound) frozen bread dough, thawed according to package directions
  • 2 ounces shredded mozzarella cheese
  • ¼ cup Greek olives, pitted and chopped 
Prepare easy tomato sauce
  1. Heat oil in medium-size saucepan over medium-high heat.
  2. Add garlic ; cook 1 minute.
  3. Add tomatoes, sugar, oregano, salt and pepper ; lower heat, simmer, uncovered, stirring occasionally, until mixture is reduced to 1¼ cups, about 20 minutes.
Prepare mini-pizzas
  1. Preheat oven to 425F ; grease large baking sheets.
  2. Cut bread dough crosswise into ½-inch-thick slices ; place about 3 inches apart on prepared baking sheets.
  3. Knead each piece with fingers into a 3-inch round.
  4. Spread equal amount of sauce on each round ; top with cheese and olives.
  5. Bake in preheated oven for 15 to 20 minutes or until crusts are browned and topping bubbly.
