- Meat of 2 sausages of your choice
- 30 ml vegetable oil
- 4 slices of cheddar cheese
- 4 eggs
- Salt and pepper
- 15 ml butter
- 4 English muffins
- 30 ml mayonnaise
- 4 slices of tomatoes
- Form four patties with the sausage meat.
- In a frying pan, heat the vegetable oil and cook the patties for about 3 minutes on each side; cover with cheddar cheese and keep warm.
- In a small bowl, whisk the eggs; season.
- In a pan, heat the butter, pour in the egg mixture and cook for 2 minutes; divide into four portions and turn to finish cooking.
- Toast the English muffins.
- Top the base of each with mayonnaise, a sausage patty, a portion of eggs and a slice of tomato.
- Close and serve.
