Roast Pork and Yellow Potatoes

 


6 servings

  • 1 tied pork loin roast of approximately 1.5 kg
  • 4 cloves of garlic
  • 30 ml sugar
  • 15 ml salt
  • 2 ml ground black pepper
  • 15 ml mustard powder
  • 15 ml vegetable oil
  • 4 Yukon Gold potatoes, peeled and cut into 6

  1. Lightly score the pork roast to insert the garlic cloves.
  2. In a small bowl, combine sugar, salt, pepper, mustard and vegetable oil; rub the roast well with this mixture.
  3. Place the roast in a casserole dish; cover and cook for 2 hours in the oven at 300F (150C).
  4. Remove the cover; place the potatoes in the cooking fat of the roast and continue cooking uncovered for 1 hour at 350F (175C).
  5. Serve.
