Roasted Sweet Potatoes, Apples and Pecans

 


                This is the ideal accompaniment for roast pork.

4 servings

  • 1 large sweet potato, peeled and cut into 2 cm cubes
  • 2 apples, cut into 2 cm cubes
  • 5 ml cumin
  • 30 ml cider vinegar
  • 60 ml of 100% natural apple
  • 30 ml butter, melted
  • Salt and pepper
  • 60 ml pecans, roughly chopped
  • 60 ml fresh parsley, chopped

  1. In a large bowl, combine all ingredients except pecans and parsley; mix and season.
  2. Spread the mixture on a baking sheet lined with parchment paper; cook for 20 minutes in the center of the oven at 400F (200C).
  3. Remove from oven, add pecans, stir and return to oven for 5 minutes.
  4. Sprinkle with chopped parsley and serve.
