This is the ideal accompaniment for roast pork.

- 1 large sweet potato, peeled and cut into 2 cm cubes
- 2 apples, cut into 2 cm cubes
- 5 ml cumin
- 30 ml cider vinegar
- 60 ml of 100% natural apple
- 30 ml butter, melted
- Salt and pepper
- 60 ml pecans, roughly chopped
- 60 ml fresh parsley, chopped
- In a large bowl, combine all ingredients except pecans and parsley; mix and season.
- Spread the mixture on a baking sheet lined with parchment paper; cook for 20 minutes in the center of the oven at 400F (200C).
- Remove from oven, add pecans, stir and return to oven for 5 minutes.
- Sprinkle with chopped parsley and serve.
