- 12 small asparagus
- 250 ml bacon pieces of 0.5 cm/¼ in
- 1 homemade or store-bought pizza dough
- 60 ml cream 35%
- 250 ml gouda cheese, grated
- 8 button mushrooms, sliced
- Salt and pepper
- 4 eggs
- Using your hands, break the asparagus to remove the tough lower third; the asparagus will naturally break in the right place, then cut the asparagus in half.
- In a pan, brown the bacon for 4 to 5 minutes; pat dry on absorbent paper and set aside.
- Preheat the oven to 500F/250C.
- Roll out the pizza dough to form a 30 cm/12 in disk; spread the cream over the dough, then top with the cheese, bacon, asparagus and mushrooms and season.
- Cook the pizza on the lower rack of the oven for 4 minutes.
- Remove from oven and crack eggs over pizza; return to oven for 6 minutes.
- Cut and serve.
