Brunch pizza (Brunch)

 


4 servings

  • 12 small asparagus
  • 250 ml bacon pieces of 0.5 cm/¼ in
  • 1 homemade or store-bought pizza dough
  • 60 ml cream 35%
  • 250 ml gouda cheese, grated
  • 8 button mushrooms, sliced
  • Salt and pepper
  • 4 eggs

  1. Using your hands, break the asparagus to remove the tough lower third; the asparagus will naturally break in the right place, then cut the asparagus in half.
  2. In a pan, brown the bacon for 4 to 5 minutes; pat dry on absorbent paper and set aside.
  3. Preheat the oven to 500F/250C.
  4. Roll out the pizza dough to form a 30 cm/12 in disk; spread the cream over the dough, then top with the cheese, bacon, asparagus and mushrooms and season.
  5. Cook the pizza on the lower rack of the oven for 4 minutes.
  6. Remove from oven and crack eggs over pizza; return to oven for 6 minutes.
  7. Cut and serve.
