- 3 tablespoons all-purpose flour
- 1½ cups sugar
- 1 cup mashed sweet potato
- 2 eggs
- ¼ cup light corn syrup
- ¼ teaspoon ground nutmeg
- Pinch salt
- ½ cup butter or margarine
- ¾ cup evaporated milk
- 1 unbaked pastry shell (9 inches)
- In a large mixing bowl, combine the flour and sugar ; add sweet potato, eggs, corn syrup, nutmeg, salt, butter and evaporated milk, beat well.
- Pour into pastry shell ; bake at 350F for 55-60 minutes.
- Cool on a wire rack for 1 hour ; store in the refrigerator.
