Southern Sweet Potato Pie (Best of country Pies)

  • 3 tablespoons all-purpose flour
  • 1½ cups sugar
  • 1 cup mashed sweet potato
  • 2 eggs
  • ¼ cup light corn syrup
  • ¼ teaspoon ground nutmeg
  • Pinch salt
  • ½ cup butter or margarine
  • ¾ cup evaporated milk
  • 1 unbaked pastry shell (9 inches)
  1. In a large mixing bowl, combine the flour and sugar ; add sweet potato, eggs, corn syrup, nutmeg, salt, butter and evaporated milk, beat well.
  2. Pour into pastry shell ; bake at 350F for 55-60 minutes.
  3. Cool on a wire rack for 1 hour ; store in the refrigerator.
