Tiny Shortbread Tarts (Best of country Pies)

 


3 dozens

  • 1 cup butter or margarine, softened
  • ½ cup confectioners' sugar
  • 2 cups all-purpose flour
  • 1 can (21 ounces) raspberry, cherry or strawberry pie filling (or your best homemade pie filling)
  1. In a mixing bowl, cream butter and sugar ; add flour and mix well.
  2. Shape into 1-in. balls ; press onto the bottom and up the sides of greased miniature muffin cups.
  3. Bake at 300F for 17-22 minutes ; cool 15 minutes, carefully remove from pans.
  4. Spoon 1 teaspoon of pie filling into each tart.
