Texas Lime Pie (Best of country Pies)

 


2 pies (6-8 servings each)

  • 3 cups graham cracker crumbs
  • ½ cup packed brown sugar
  • Two-third cup butter or margarine, melted
  • 3 cans (14 ounces each) sweetened condensed milk
  • 5 egg yolks
  • 2 cups lime juice
  1. In a bowl, combine cracker crumbs, brown sugar and butter ; press onto the bottom and up the sides of two greased 9-in. pie plates.
  2. In a mixing bowl, beat milk, egg yolks and lime juice on low speed for 2 minutes or until smooth and slightly thickened.
  3. Pour into prepared crusts ; bake at 350F for 18-22 minutes or until a knife inserted near the center comes out clean.
  4. Cool on a wire rack for 1 hour ; chill for 6 hours.
  5. Garnish with whipped cream, lime and mint if desired.
