Serves 8
- Graham cracker crumbs
- Melted butter
- 36 ounces cream cheese, softened
- 1½ cups sugar
- 5 eggs
- 1 cup Bailey's irish cream
- 1 tablespoon vanilla extract
- ½ cup chocolate chips
- ½ cup chocolate chips
- Whipped cream
- Chocolate sprinkles
- Combine the graham cracker cumbs and melted butter, and press into the bottom and sides of a 10-inch spring-form pan.
- Bake in a 325F (165C) oven for 10 minutes, remove and cool.
- In a large bowl beat the creamcheese until smooth.
- Gradually add the sugar, beating until well blended.
- Beat in the eggs one at a time.
- Blend in the Bailey's irish cream and vanilla.
- Sprinkle ½ cup of chocolate chips over the bottom of the baked crust and pour in the filling.
- Sprinkle ½ cup of chocolate chips over the filling.
- Bake in a 325F (165C) for about 1 hour and 20 minutes, until puffed.
- Serve with whipped cream and chocolate sprinkles.
