Bailey's Chocolate Chip Cheesecake


Serves 8
  • Graham cracker crumbs
  • Melted butter

  • 36 ounces cream cheese, softened
  • 1½ cups sugar
  • 5 eggs
  • 1 cup Bailey's irish cream
  • 1 tablespoon vanilla extract
  • ½ cup chocolate chips

  • ½ cup chocolate chips
  • Whipped cream
  • Chocolate sprinkles
  1. Combine the graham cracker cumbs and melted butter, and press into the bottom and sides of a 10-inch spring-form pan.
  2. Bake in a 325F (165C) oven for 10 minutes, remove and cool.
  3. In a large bowl beat the creamcheese until smooth.
  4. Gradually add the sugar, beating until well blended.
  5. Beat in the eggs one at a time.
  6. Blend in the Bailey's irish cream and vanilla.
  7. Sprinkle ½ cup of chocolate chips over the bottom of the baked crust and pour in the filling.
  8. Sprinkle ½ cup of chocolate chips over the filling.
  9. Bake in a 325F (165C) for about 1 hour and 20 minutes, until puffed.
  10. Serve with whipped cream and chocolate sprinkles.
