Bourbon ribs


Beef ribs

                Try these for one of the best barbecues you have ever tasted.
 
Serves 4
  • 4 pounds beef or pork ribs
The sauce
  • ½ cup chopped onion
  • ½ cup molasses
  • ½ cup ketchup
  • 2 teaspoons finely shredded orange peel
  • One-third cup orange juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon vinegar
  • 1 tablespoon steak sauce
  • ½ teaspoon prepared mustard
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon hot pepper sauce
  • Pinch of ground cloves
  • ¼ cup bourbon
  1. In a large Dutch oven or saucepan combine the ribs with enough water to cover and bring to a boil.
  2. Reduce  the heat, cover, and simmer for 40 to 55 minutes, until the ribs are tender.
  3. Remove from the heat and drain thoroughly.
  4. In a medium saucepan combine the ingredients of the sauce, bring to a boil and gently simmer uncovered for 15 to 20 minutes.
  5. Grill the ribs over slow coal for about 45 minutes, turning every 15 minutes and basting with the sauce.
  6. Extra sauce can be served with the meat.
