Banana lemon bread (no milk products)


Makes 2 loafs
  • ½ cup butter, oil or margarine
  • 1 cup sugar
  • 2 eggs, beaten
  • 2 cups mashed ripe bananas
  • 6 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 3 tablespoons grated lemon peel

  1. Grease 2 loaf pans.
  2. In a mixing bowl, cream together the butter and sugar.
  3. Blend in the eggs, bananas and juice.
  4. Stir in dry ingrédients, add the grated lemon peel and pour the batter into the prepared pans.
  5. Bake in a 350F (175C) oven for 1 hour.
