Makes 2 loafs
- ½ cup butter, oil or margarine
- 1 cup sugar
- 2 eggs, beaten
- 2 cups mashed ripe bananas
- 6 tablespoons lemon juice
- 2 cups all-purpose flour
- 1 tablespoon baking soda
- 3 tablespoons grated lemon peel
- Grease 2 loaf pans.
- In a mixing bowl, cream together the butter and sugar.
- Blend in the eggs, bananas and juice.
- Stir in dry ingrédients, add the grated lemon peel and pour the batter into the prepared pans.
- Bake in a 350F (175C) oven for 1 hour.
