Here is a simple and delicious way to give mushrooms an exotic spicy flavour. They may be served with grilled or roasted meats or poultry.
- 30 ml peanut oil
- 2 garlic cloves, finely chopped
- 2 red chillies, seeded and sliced into rings
- 3 shallots, finely chopped
- 225 gr/8oz button mushrooms thickly sliced
- 150 ml coconut milk
- 30 ml chopped fresh coriander
- Salt and freshly ground black pepper
- Heat a wok until hot, add the oil and swirl it around.
- Add the garlic and chillies and stir-fry for a few seconds.
- Add the finely chopped shallots and stir-fry for 2-3 minutes until softened.
- Add the mushrooms and stir-fry for 3 minutes.
- Pour the coconut milk and bring to a boil.
- Boil rapidly over high heat until the liquid reduced by half and coats the mushrooms.
- Taste and adjust the seasonning.
- Sprinkle over the coriander and toss gently to mix.
- Serve at once.
