Monte Cristo sandwich

Serves 6
  • ½ cup butter, softened
  • 2 teaspoons prepared mustard
  • 12 slices white bread
  • 6 slices swiss cheese, cut in half
  • 6 slices cooked ham
  • 3 eggs, beaten
  • One-third cup milk
  • Confectioners' sugar and cherry preserves
  1. In a small bowl beat together the butter and mustard until well blended.
  2. Spread on one side of each slice of bread.
  3. For each sandwich, top one slice of bread with half a slice of cheese, one slice of ham, half a slice of cheese, and a second slice of bread, butter-side down.
  4. In a medium bowl beat together the eggs and milk.
  5. Dip each sandwich into the egg mixture.
  6. Brown both sides of the sandwich on a lightly buttered griddle.
  7. Place on a cookie sheet and bake in a 425F (210C) oven for 8 to 10 minutes.
  8. Slice each sandwich in half, sprinkle with confectioners' sugar, and top with preserves.
