- ½ cup shortening
- ½ cup sugar
- ½ cup packed brown sugar
- 1 egg
- 1 tablespoon water
- ½ teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup quick-cooking oats
- 1 cup semisweet chocolate chips
- ¾ cup dried cranberries
- ½ cup chopped walnuts
- ½ cup English toffee bits or almonds brickle chips
- In a mixing bowl, cream shortening and sugars ; beat in egg, water and vanilla.
- Combine flour, baking soda and salt ; gradually add to the creamed mixture.
- Stir in remaining ingredients ; drop by tablespoonfuls 3 in. apart onto ungreased baking sheets.
- Bake at 375F (190C) for 10-12 minutes or until lightly browned ; cool for 2 minutes before removing on wire racks.
Tips : Preheat the oven for 10 to 15 minutes before beginning to bake cookies. Also remember that the temperature of all ovens varies. So make sure to check cookies a couple of minutes before the minimum baking time.
