The batter for these fritters is very light. Serve them with honey or maple syrup for breakfast, or as an accompaniment to roast pork or chicken.
Makes 6 servings
- One-third cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon baking powder
- 2 large eggs
- ½ cup milk
- 2 cups fresh corn or 1 package (10 ounces) frozen whole-kernel corn, thawed
- Vegetable oil, for frying
- Sift together flour, salt and baking powder into bowl ; add eggs and milk, whisk until smooth and stir in corn.
- Heat vegetable oil in depp-fat fryer or deep saucepan to 375F.
- Working in batches, carefully add batter in One-eight cup measure to hot oil ; do not crowd.
- Fry fritters for 1 to 2 minutes on each side until golden brown, turning fritters over with slotted metal spatula ; transfer fritters with spatula to tray lined with paper toweling.
- Serve hot or warm.
