Jerusalem artichoke sauté (Low-calorie)(Low-cholesterol)

 


           Jerusalem artichoke have a flavor reminiscent of turnip and water chestnuts. This quick sauté is delicious with roast chicken and other meats.

Makes 4 servings

  • 1 tablespoon vegetable oil
  • 2 green onions, sliced
  • 1 small sweet red pepper, cored, seeded and diced
  • 1 package (16 ounces) Jerusalem artichokes, pared and cut into ¼-inch matchstick pieces
  • 1 tablespoon chopped fresh mint
  • ½ teaspoon salt
  • 1 tablespoon lemon juice
  1. Heat oil in large skillet over medium-high heat ; add green onion and red pepper.
  2. Sauté 3 minutes until slightly softened.
  3. Add Jerusalem artichokes, mint and salt ; cook 3 minutes, stirring occasionally.
  4. Stir in lemon juice.
