Drizzle cookies with melted chocolate if you'd like.
Makes about 3 dozens wafers
- 1¼ cups all-purpose flour
- ¾ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, at room temperature
- ¾ cup sugar
- 1 egg
- 2 tablespoons grated lemon rind
- ¼ teaspoon vanilla
- Preheat oven to 375F.
- Stir together flour, baking powder and salt in medium-size bowl.
- Beat butter in large bowl until creamy ; gradually beat in sugar until light and fluffy.
- Beat in eggs, lemon rind ad vanilla until smooth ; gradually beat flour mixture into butter mixture until well blended.
- Drop dough by heaping teaspoonfuls, 2 inches apart, onto ungreased baking sheets.
- Bake in preheated oven for 8 to 10 minutes until edges of cookies are lightly browned ; remove cookies from baking sheets to wire racks to cool.
