Lemon wafers

 


             Drizzle cookies with melted chocolate if you'd like.

Makes about 3 dozens wafers

  • 1¼ cups all-purpose flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, at room temperature
  • ¾ cup sugar
  • 1 egg 
  • 2 tablespoons grated lemon rind
  • ¼ teaspoon vanilla
  1. Preheat oven to 375F.
  2. Stir together flour, baking powder and salt in medium-size bowl.
  3. Beat butter in large bowl until creamy ; gradually beat in sugar until light and fluffy.
  4. Beat in eggs, lemon rind ad vanilla until smooth ; gradually beat flour mixture into butter mixture until well blended.
  5. Drop dough by heaping teaspoonfuls, 2 inches apart, onto ungreased baking sheets.
  6. Bake in preheated oven for 8 to 10 minutes until edges of cookies are lightly browned ; remove cookies from baking sheets to wire racks to cool.
