The original recipe for HP sauce is said to have been invented in 1895 by Frédérick Gibson Garton, a grocer from Nottingham, England.
6 skewers
2 chicken breasts, cut into 3 cm (1½ in.) cubes
18 whole button mushrooms
4 slices thick cut bacon, cut into 4 squares
1 red onion, cut into squares
BBQ marinade
1 clove garlic, minced
125ml ketchup
15ml Worcestershire sauce
15ml HP sauce
60 ml brown sugar
30ml vegetable oil
5 ml steak spices
In a bowl, combine all the ingredients for the BBQ marinade; toss the chicken cubes and mushrooms into the marinade.
Cover and marinate in the fridge for at least 1 hour.
On pre-soaked wooden skewers, alternate chicken cubes, bacon squares, onion pieces and mushrooms.
Grill the skewers for 12 to 15 minutes over medium heat on the barbecue or in a ridged cast iron skillet; brush with remaining marinade and turn skewers during cooking.
Serve.
