4 skewers
- 8 smoked mozzarella cubes (caciocavallo) 2 cm (1 in.)
- 30 ml flour
- 1 egg, beaten
- 125 ml Italian breadcrumbs
- 4 mini sweet peppers
- ½ radicchio, cut into 8
- 8 slices of chorizo, 1 cm (½ in.)
- 30ml vegetable oil
Vinaigrette
- 60 ml olive oil
- 30 ml balsamic vinegar
- In a small plate, roll the cheese cubes in the flour, then dip in the egg and coat with breadcrumbs; press lightly so that it adheres well.
- Dip in egg and breadcrumbs a second time; to book.
- On pre-soaked wooden skewers, prick 1 mini pepper and alternate the radicchio, the breaded mozzarella cubes and the chorizo slices.
- In a large nonstick skillet, heat the vegetable oil and cook the skewers for 1 to 2 minutes on each side or until the cheese cubes are golden brown.
- In a small bowl, combine olive oil and balsamic vinegar; drizzle the skewers with this mixture, avoiding soaking the cheese cubes.
- Serve.
