Chorizo and Melting Cheese Skewers

 


4 skewers

  • 8 smoked mozzarella cubes (caciocavallo) 2 cm (1 in.)
  • 30 ml flour
  • 1 egg, beaten
  • 125 ml Italian breadcrumbs
  • 4 mini sweet peppers
  • ½ radicchio, cut into 8
  • 8 slices of chorizo, 1 cm (½ in.)
  • 30ml vegetable oil

Vinaigrette

  • 60 ml olive oil
  • 30 ml balsamic vinegar

  1. In a small plate, roll the cheese cubes in the flour, then dip in the egg and coat with breadcrumbs; press lightly so that it adheres well.
  2. Dip in egg and breadcrumbs a second time; to book.
  3. On pre-soaked wooden skewers, prick 1 mini pepper and alternate the radicchio, the breaded mozzarella cubes and the chorizo slices.
  4. In a large nonstick skillet, heat the vegetable oil and cook the skewers for 1 to 2 minutes on each side or until the cheese cubes are golden brown.
  5. In a small bowl, combine olive oil and balsamic vinegar; drizzle the skewers with this mixture, avoiding soaking the cheese cubes.
  6. Serve.
