Orange Lacquered Duck Skewers

 


4 skewers

  • 1 duck breast, cut into 12 3-cm (1½-inch) cubes
  • 4 dried figs
  • 1 leek, cut into 1 cm (½ in.) rounds

Soy-orange marinade

  • 60 ml honey
  • 30 ml soy sauce
  • 30 ml rice vinegar
  • 5 ml ground coriander
  • 30 ml fresh thyme, chopped
  • Zest and juice of 1 orange
  • 2 garlic cloves, minced

  1. In a bowl, combine all the marinade ingredients, then add the duck cubes and figs; mix well and leave to rest in the refrigerator for a minimum of 2 hours.
  2. On pre-soaked wooden skewers, alternate the duck cubes, figs and leek slices.
  3. Brush the skewers with the marinade and cook for 4 to 6 minutes on the barbecue or in a ridged cast iron skillet; turn and brush several times during cooking.
  4. Serve.
