4 skewers
- 1 duck breast, cut into 12 3-cm (1½-inch) cubes
- 4 dried figs
- 1 leek, cut into 1 cm (½ in.) rounds
Soy-orange marinade
- 60 ml honey
- 30 ml soy sauce
- 30 ml rice vinegar
- 5 ml ground coriander
- 30 ml fresh thyme, chopped
- Zest and juice of 1 orange
- 2 garlic cloves, minced
- In a bowl, combine all the marinade ingredients, then add the duck cubes and figs; mix well and leave to rest in the refrigerator for a minimum of 2 hours.
- On pre-soaked wooden skewers, alternate the duck cubes, figs and leek slices.
- Brush the skewers with the marinade and cook for 4 to 6 minutes on the barbecue or in a ridged cast iron skillet; turn and brush several times during cooking.
- Serve.
