Flamboyant Beef Skewers

 


4 skewers

  • 400 gr beef cubes for skewers (Striploin)
  • 1 red bell pepper, cut into 3 cm squares
  • 1 yellow bell pepper, cut into 3 cm squares
  • 1 orange bell pepper, cut into 3 cm squares
  • 1 onion, cut into 3 cm squares
  • 30 ml vegetable oil
  • Salt and pepper

Red curry and coconut marinade

  • 30 ml red curry paste
  • 30 ml soy sauce
  • 5 ml sesame oil
  • 60 ml coconut milk
  • 30 ml vegetable oil

  1. In a large bowl, combine the beef cubes with the marinade ingredients; let marinate in the refrigerator for a minimum of 2 hours.
  2. In another bowl, mix all the vegetables with the vegetable oil; season.
  3. On pre-oiled wooden skewers, alternate pieces of beef and vegetables.
  4. Cook over high heat 6 to 10 minutes, depending on the desired doneness, on the barbecue or on a ridged cast iron griddle.
  5. Serve on a bed of rice.
