All-in-one feast

 


4 servings

  • 6 sausages of your choice
  • 16 button mushrooms
  • 2 red peppers, seeded and cut into 2cm/1in strips
  • 2 red onions, sliced into 1 cm/½ inch strips
  • 60 ml balsamic vinegar
  • 60 ml olive oil
  • Salt and pepper
  • 60 ml fresh parsley, chopped

  1. In a bowl, combine sausage, mushrooms, peppers, onions, vinegar and olive oil; season.
  2. Place the mixture in a roasting tin and bake for 40 minutes in the oven at 400F/200C.
  3. Sprinkle with chopped parsley and serve with Dijon mustard or Dijon sauce.
