- 6 sausages of your choice
- 16 button mushrooms
- 2 red peppers, seeded and cut into 2cm/1in strips
- 2 red onions, sliced into 1 cm/½ inch strips
- 60 ml balsamic vinegar
- 60 ml olive oil
- Salt and pepper
- 60 ml fresh parsley, chopped
- In a bowl, combine sausage, mushrooms, peppers, onions, vinegar and olive oil; season.
- Place the mixture in a roasting tin and bake for 40 minutes in the oven at 400F/200C.
- Sprinkle with chopped parsley and serve with Dijon mustard or Dijon sauce.
