- 1 whole chicken
- 45 ml BBQ seasoning
- 30 ml vegetable oil
- 2 onions, cut into 4
BBQ Seasoning
- 60 ml sweet paprika
- 15 ml ground black pepper
- 15 ml celery salt or regular
- 15 ml brown sugar
- 5 ml mustard powder
- 5 ml onion powder
- 5 ml garlic powder
- 5 ml cayenne pepper
- For the BBQ seasoning, combine all ingredients in a bowl; This spice blend will keep for 3 to 4 months in an airtight container in the freezer.
- To obtain crispy skin, slide a finger under the skin of the chicken breasts and thighs.
- In a small bowl, combine BBQ seasoning with oil; Rub the entire chicken well with this mixture to penetrate the spices into the flesh.
- Place the onions inside the chicken.
- Place the chicken in a baking dish and cook in the center of the oven at 400F (200C) for 1 hour 20 minutes. ; baste the chicken with its juice halfway through cooking.
- Cut and serve.
