This sandwich is delicious cold, but if you prefer, place the cheese-brushed bread under the broiler for a few minutes. The bread will become crispy and the cheese will melt.

15 ml olive oil
1 portobello mushroom, chopped
15 ml chives, minced
15 ml cream cheese
5 ml whole-grain mustard
1 ciabatta loaf, sliced in 2
A few slices of cooked roast beef, click here
A few slices of tomato
A few lettuce leaves
In a pan, heat the olive oil and brown the mushroom for 3 to 4 minutes, set aside.
In a small container, combine chives, cream cheese, mustard and mushroom; stir to combine the ingredients well.
Cut bread in half and brush each side with cream cheese mixture; top with slices of beef, then arrange the tomato slices and lettuce leaves.
Close the sandwich.
