To add a little craziness to this recipe, add foie gras. Just add a small can inside the chicken at the start of cooking. No need to spread it as it will melt.

- 1 whole chicken
- 8 sprigs of fresh thyme
- 12 cloves of garlic, crushed
- 1 lemon, cut into 4
- Salt and pepper
- 30 ml olive oil
- 12 button mushrooms
- 500 ml wild mushrooms of your choice: oyster mushroom, chanterelle, morel, chanterelle, etc.
- Inside the chicken, place the thyme, garlic cloves and lemon wedges; tie the chicken, season the outside of the chicken and place in a baking dish.
- Drizzle the chicken with olive oil and cook for 1 hour in the oven at 400F (200C); baste the chicken with its cooking juices every 10 minutes.
- Arrange the mushrooms around the chicken and finish cooking for 20 minutes.
- Cut and serve.
