Lemon Chicken with Mushrooms

 


                To add a little craziness to this recipe, add foie gras. Just add a small can inside the chicken at the start of cooking. No need to spread it as it will melt.

4 servings

  • 1 whole chicken
  • 8 sprigs of fresh thyme
  • 12 cloves of garlic, crushed
  • 1 lemon, cut into 4
  • Salt and pepper
  • 30 ml olive oil
  • 12 button mushrooms
  • 500 ml wild mushrooms of your choice: oyster mushroom, chanterelle, morel, chanterelle, etc.

  1. Inside the chicken, place the thyme, garlic cloves and lemon wedges; tie the chicken, season the outside of the chicken and place in a baking dish.
  2. Drizzle the chicken with olive oil and cook for 1 hour in the oven at 400F (200C); baste the chicken with its cooking juices every 10 minutes.
  3. Arrange the mushrooms around the chicken and finish cooking for 20 minutes.
  4. Cut and serve.
