- ½ salmon fillet, skinless, taken from the thickest part of the fillet
- 30 ml orange marmalade
BBQ Seasoning
- 15 ml olive oil
- 15 ml brown sugar
- 10 ml coarse salt
- 5 ml ground black pepper
- 15 ml sweet paprika
- 2 ml mustard powder
- 2 ml onion powder
- 2 ml garlic powder
- 1 ml cayenne pepper
- In a container, combine all the BBQ seasoning ingredients; to book.
- Cut the salmon fillet lengthwise to open it; brush the inside of the fish with marmalade, and roll to form a roast.
- Rub the roast with BBQ seasoning and let rest in the refrigerator for 30 minutes.
- Place roast in a lightly oiled baking dish; bake for 20 minutes in the oven at 400F (200C).
- Slice the salmon roast and serve with the accompaniment of your choice.
