- 1¾ cups all-purpose flour
- ½ cup shredded sharp cheddar cheese
- ¼ cup sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¼ teaspoon ground red pepper
- 1 egg,beaten
- ¾ cup milk
- One-third cup oil
- 6 strips bacon, crisp-cooked and crumbled
- Line or grease 8 muffin cups and top of pan, and sprinkle with cornmeal.
- In a large bowl, stir together the flour, cheese, sugar, baking powder, salt and red pepper.
- In a separate bowl, combine the egg, milk and oil.
- Make a well in the center of the dry ingrédients and add the liquid mixture, stirring just until moistened ; batter should be lumpy.
- Fold in the crumbled bacon ; fill the prepared muffin cups to the top.
- Bake in a 400F (200C) oven for 20 to 25 minutes.
