Fudgy Rum Brownies (Holiday Menus for Family)

 


3 dozens brownies

  • ½ cup margarine or butter
  • 1 package (12 ounces) semisweet chocolate chips (2 cups)
  • 1½ cup sugar
  • 1¼ cup all-purpose flour
  • 2 tablespoons rum or 1 teaspoon rum extract
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 3 eggs
  • 1 cup chopped nuts
  • Rum Frosting (recipe below)
  1. Heat oven to 350F.
  2. Grease rectangular pan, 13 x 9 x 2 inches.
  3. Heat margarine and chocolate chips in 3-quart saucepan over low heat, stirring constantly, until melted ; beat in remaining ingredients except nuts and rum frosting until smooth, stir in nuts.
  4. Spread in pan ; bake about 30 minutes or until center is set.
  5. Cool completely ; frost with rum frosting.
  6. Cut into about 2 x 1½-inch bars
Rum Frosting
  • 2 cups powdered sugar
  • ¼ cup margarine or butter, softened
  • 1 teaspoon rum or ½ teaspoon rum extract
  • 1 to 2 tablespoons milk
  1. Mix powdered sugar, margarine and rum.
  2. Beat in milk until smooth and spreading consistency.
