3 dozens brownies
- ½ cup margarine or butter
- 1 package (12 ounces) semisweet chocolate chips (2 cups)
- 1½ cup sugar
- 1¼ cup all-purpose flour
- 2 tablespoons rum or 1 teaspoon rum extract
- 1 teaspoon vanilla
- ½ teaspoon baking powder
- ½ teaspoon salt
- 3 eggs
- 1 cup chopped nuts
- Rum Frosting (recipe below)
- Heat oven to 350F.
- Grease rectangular pan, 13 x 9 x 2 inches.
- Heat margarine and chocolate chips in 3-quart saucepan over low heat, stirring constantly, until melted ; beat in remaining ingredients except nuts and rum frosting until smooth, stir in nuts.
- Spread in pan ; bake about 30 minutes or until center is set.
- Cool completely ; frost with rum frosting.
- Cut into about 2 x 1½-inch bars
Rum Frosting
- 2 cups powdered sugar
- ¼ cup margarine or butter, softened
- 1 teaspoon rum or ½ teaspoon rum extract
- 1 to 2 tablespoons milk
- Mix powdered sugar, margarine and rum.
- Beat in milk until smooth and spreading consistency.
