For 4 portions
- 4 salmon steaks, about 1 inch thick
- Salt and pepper
- 2 tablespoons margarine or butter
- Orange Bearnaise (recipe below)
- Set oven control to broil.
- Sprinkle both sides of fish steaks with salt and pepper ; brush half of the margarine.
- Place fish on rack in broiler pan ; broil with tops about 4 inches from heat about 6 minutes or until light brown.
- Turn carefully, brush with margarine ; broil 4 to 6 minutes longer or until fish flakes very easily with fork.
- While fish is broiling, prepare Orange bearnaise sauce ; serve sauce over fish
Orange Bearnaise Sauce
- ½ cup cold water
- 1 tablespoon cornstarch
- ¼ cup margarine or butter
- 1 tablespoon finely chopped onion
- 1 tablespoon orange juice
- 1 teaspoon chopped fresh chervil
- 1 teaspoon chopped fresh tarragon
- ½ teaspoon grated orange peel
- Pinch of salt
- ½ cup plain yogurt
- Gradually stir cold water into cornstarch in 1-quart saucepan ; stir in remaining ingredients except yogurt.
- Heat over medium heat, stirring constantly, until mixture thickens and boils ; boil and stir 1 minute and remove from heat.
- Place yogurt in small bowl ; beat vigorously with fork until smooth.
- Pour hot mixture into yogurt, beating constantly with fork.
