Salmon Steaks with Orange Bearnaise Sauce (Holiday Menus for Family)

 


For 4 portions

  • 4 salmon steaks, about 1 inch thick
  • Salt and pepper
  • 2 tablespoons margarine or butter
  • Orange Bearnaise (recipe below)
  1. Set oven control to broil.
  2. Sprinkle both sides of fish steaks with salt and pepper ; brush half of the margarine.
  3. Place fish on rack in broiler pan ; broil with tops about 4 inches from heat about 6 minutes or until light brown.
  4. Turn carefully, brush with margarine ; broil 4 to 6 minutes longer or until fish flakes very easily with fork.
  5. While fish is broiling, prepare Orange bearnaise sauce ; serve sauce over fish
Orange Bearnaise Sauce
  • ½ cup cold water
  • 1 tablespoon cornstarch
  • ¼ cup margarine or butter
  • 1 tablespoon finely chopped onion
  • 1 tablespoon orange juice
  • 1 teaspoon chopped fresh chervil
  • 1 teaspoon chopped fresh tarragon
  • ½ teaspoon grated orange peel
  • Pinch of salt
  • ½ cup plain yogurt
  1. Gradually stir cold water into cornstarch in 1-quart saucepan ; stir in remaining ingredients except yogurt.
  2. Heat over medium heat, stirring constantly, until mixture thickens and boils ; boil and stir 1 minute and remove from heat.
  3. Place yogurt in small bowl ; beat vigorously with fork until smooth.
  4. Pour hot mixture into yogurt, beating constantly with fork.
