- 3 tablespoons mayonnaise
- 2 tablespoons curd cheese
- 2 teaspoons wine vinegar
- ¼ teaspoon salt
- ¼ teaspoon white pepper
- ¼ teaspoon sugar
- 2 canned pineapple rings
- 3 hard-boiled eggs
- 2 slices dark rye bread
- 15 gr soft butter
- 4 large slices ham
Garnish
- 1 tomato
- Parsley sprigs
- Few lettuce leaves
- Cream together mayonnaise, curd cheese, vinegar, salt, pepper and sugar.
- Drain pineapple rings and cut into small pieces ; shell and finely chopped the eggs, and stir with the pineapple into the mayonnaise mixture.
- Remove the crust from the bread, spread the bread with the butter and cut each slice into quarters.
- Trim all the fat from the ham and cut each slice in half ; spoon an equal amount of the mayonnaise mixture onto each slice and roll up.
- Place one roll on each piece of bread.
- Wash and dry the tomato, cut into eight wedges and scoop out the seeds with a spoon.
- Garnish each ham roll with a wedge of tomato and a parsley sprig, and serve on a bed of lettuce.
