Honey-baked rutabaga (low calorie, low-fat, low-cholesterol, low-sodium)

 


     At first glance these look like French fries, but they're really a healthful alternative. Try as an appetizer.

Makes 4 servings

  • 1 rutabaga (1½ pounds)
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon honey
  • Pinch of pepper
  1. Preheat oven to 375F ; coat jelly-roll pan with nonstick vegetable-oil cooking spray.
  2. Pare rutabaga ; cut into ½-inch slices and cut slices into ½-inch-wide sticks.
  3. In large bowl, stir together butter, honey and pepper ; add rutabaga and toss together to mix.
  4. Place rutabaga on pan in single layer ; bake in preheated oven until tender and brown, about 45 minutes, turning sticks over after 30 minutes.
