Makes 6 servings
- ¾ cup all-purpose flour
- ½ teaspoon salt
- ¾ cup cold water
- 2 vidalia or 1 spanish onion (8 ounces), sliced into one-eigth-inch-thick rings
- Vegetable oil, for frying
- Coarse salt
- In medium-size bowl, combine flour and salt ; pour water, whisking until blended and consistency of heavy cream.
- Separate onion slices into rings.
- Heat 1 inch oil in Dutch oven or large deep skillet over medium-high heat until deep-fry thermometer registres 375F.
- Drop 6 to 10 onion rings into batter, tossing with a fork to coat.
- Drpo rings individually into oil in single layer ; cook 2 to 3 minutes or until golden brown, turning once.
- Drain on paper toweling and sprinkle with coarse salt ; repeat with remaining onion rings.
