Vidalia onion rings

 


Makes 6 servings

  • ¾ cup all-purpose flour
  • ½ teaspoon salt
  • ¾ cup cold water
  • 2 vidalia or 1 spanish onion (8 ounces), sliced into one-eigth-inch-thick rings
  • Vegetable oil, for frying
  • Coarse salt
  1. In medium-size bowl, combine flour and salt ; pour water, whisking until blended and consistency of heavy cream.
  2. Separate onion slices into rings.
  3. Heat 1 inch oil in Dutch oven or large deep skillet over medium-high heat until deep-fry thermometer registres 375F.
  4. Drop 6 to 10 onion rings into batter, tossing with a fork to coat.
  5. Drpo rings individually into oil in single layer ; cook 2 to 3 minutes or until golden brown, turning once.
  6. Drain on paper toweling and sprinkle with coarse salt ; repeat with remaining onion rings.
